BEETROOT LASAGNA




I saw this recipe a while back and wrote it down (I can't remember where it was from but if you do please let me know so I can link back). Last night I finally got around to making it; beetroot lasagna. I promise, it tastes a lot better than it sounds. It's very easy. This makes enough for four to six people.

1 kg beetroot, cleaned and grated
4 carrots, peeled and grated
8 garlic cloves, grated or finely chopped
2 tsp chili, chopped - or to your taste
1 red onion, chopped
1 can (400ml) crushed tomatoes
coriander
cottage cheese
lasagna sheets
grated cheese to go on top

Mix everything together on a pan, but leave out the cottage cheese, lasagna sheets and grated cheese. Once heated and blended well together on the pan start layering in a large baking dish - beetroot mixture, lasagna sheets, cottage cheese and finish off with grated cheese on top. Bake in a 200°C oven for about 15-20 minutes. I served mine with freshly made spinach and coriander pesto - so delicious!
