Dinner: Chicken salad with mango & avocado

Oh my goodness! This recipe appeared on DV yesterday - yumm! This was for dinner in my home tonight. It was so delicious and fresh - perfect summer salad! And the best part: 185calories per serving!

I translated the recipe for those of you that don't read Icelandic. *

2taplespoons olive oil
2taplespoons lime
2taplespoons mango chutney
1taplespoon soy souce
3/4teaspoon ginger
2-4 skinless chicken breast
8cups salad
1cup mango, cubed
3/4cups avocado, cubed

Heat oven or grill (can use either one)

Mix olive oil, lime, mango chutney, soy souce and ginger in a bowl - stir. Place the chicken on a plate and pour about half of the dressing over the chicken, save the rest for the salad itself. Let it marinade for about 5-10 minutes.

Grill the chicken for 4 minutes on each side. After turning them over pour the rest of the dressing used for marinading over. Cut chicken into bite size pieces.

Place the salad, mango and avocado eaqually onto four plates, place the chicken on top of it and pour the rest of the dressing over the salad. Serve with bread (naan bread for example) and dry white wine.
